A Healthy Cottage Pie Recipe that is almost syn free.
- 1.5kg potatoes pealed and cut in to bite sized pieces
- 500g lean minced beef
- 3 large carrots finely sliced
- 2 large onions roughly chopped
- 3 sticks of celery finely sliced
- large pinch mixed herbs
- 2 beef oxos
- salt and pepper to season
- low calorie cooking oil spray
- boiling water
- Boil the potatoes in plenty of salted water until they are cooked enough to allow easy mashing.
- Whilst the potatoes are cooking… Spray a large frying pan or wok with oil and place on a high heat.
- Brown the minced beef for a few minutes in the frying pan until it is just about fully cooked.
- Add the vegetables to the minced beef and continue to cook until the vegetables are softened and a little browned.
- Season the beef and vegetables with the mixed herbs, salt and pepper and oxos, mix well and cook for a minute or two more.
- Top up the beef and vegetables with boiling water, just enough to make the mix in to a gravy.
- Boil the water off the beef until you have a rich and thick gravy, and turn off the heat.
- By now the potatoes should be cooked. Drain the water from the potatoes and allow any steam to evaporate off. Season with a little pepper and mash well. You do not need to add anything else to the mash.
- Transfer the beef, vegetables and gravy in to a casserole dish.
- Spoon the mashed potatoes over the beef and vegetables and smooth over with a fork.
- Bake in a pre-heated oven at 180c for about 30 minutes until the mash has browned a little on top.
- Serve with the vegetables of your choice in this case with peas.
