Chicken Vindaloo curry can be as hot or mild as you care to make it, depending on how many chili peppers you choose to add. What defines Vindaloo is actually the vinegar used to make the curry paste. Effectively Vindaloo is sweet and sour curry.

  • 400g chicken breast cut in to bite sized pieces.
  • 2 large onions finely sliced.
  • 1 tin tomatoes.
  • 3 garlic cloves finely chopped.
  • 2, 3 or 4 chili peppers.
  • 1 inch of root ginger grated.
  • 1 teaspoon ground turmeric.
  • 1 teaspoon ground coriander.
  • 1 teaspoon garam masala.
  • 1 teaspoon ground cumin.
  • 2 tablespoons red or white vinegar.
  • Salt and pepper.
  • Low calorie cooking oil spray.
  1. Make a curry paste by combining in a bowl the ginger and vinegar together with the spices, turmeric, coriander, cumin and garam masala.
  2. Spray a large wok or frying pan with plenty of low calorie spray and place on a high heat.
  3. Place the onions in the pan and fry for a couple of minutes until they are softened.
  4. Add the chili and garlic and continue to cook for another couple of minutes.
  5. Add the chicken and again cook for an extra couple of minutes.
  6. Add the curry paste and mix in well making sure all chicken pieces get a coating with the paste.
  7. Add the tomatoes, mix well, turn down to a low simmer, and cook for about 30 minutes until the sauce has thickened down. Vidaloo should be a relatively thick sauce.
  8. Serve with plenty of boiled rice.
